As a college student is wont to do, I try to find the cheapest, most efficient way to do anything. Especially when it comes to meals I’m always on the lookout for simple, quick recipes. Cooking is enjoyable as long as it doesn’t keep me in the kitchen for hours on end. When I stumbled upon this recipe for cracker chicken with only 3 ingredients, I knew it was a winner.
Paired with mac & cheese this would make a great home-away-from-home type meal. I went a healthier route choosing a spinach salad instead. Chicken is so versatile that I didn’t mind making it in bulk. Since I made it on Monday, I’ve used chicken in every dinner.
Easy Ritz Cracker Chicken
Ingredients
1/2 bottle Ranch dressing
1 lb boneless, skinless chicken tenderloins or breasts
1 sleeve of Ritz crackers, crushed
salt & pepper
Instructions:
Preheat oven to 350. Place an oven-safe cooling rack on a cookie sheet and spray with non-stick cooking spray.
Season chicken tenderloins (or breasts) with salt and pepper and coat in ranch dressing. Immediately following, cover chicken with crushed Ritz crackers.
Place on baking sheet and bake in oven for about 25-30 minutes.
