So one of the best things about Christmas is the food. At my house, there is just nonstop cooking and baking going on until the 25th. I wish I could post all the wonderful dishes my mom makes (I actually just might if I get bored enough.) One of my favorite things to make though are mini cherry cheesecakes. They are so quick and simple to make. This is like the one time out of the year I eat cheesecake, which is kind of sad because cheesecake might be my favorite dessert. Anyway, it’s become a tradition to make these babies on Christmas Eve so I thought I’d share the recipe today.
Mini Cherry Cheesecakes
2 packages of cream cheese, room temperature
1 cup sugar
1 tsp vanilla extract
2 eggs, beaten
Vanilla Wafers
Cherry Pie Filling
Preheat oven to 375°. Combine ingredients until smooth.
Line cupcake tin with cupcake liners. Place 1 vanilla wafer in each liner, then fill with mixture.
Top with a cherry from the pie filling.
Bake for 15 minutes… and done!
