One of the saddest parts about summer ending is the disappearance of fruit stands and farmers markets. I love picking up fresh veggies and fruits for a summery meal. It’s so fun to experiment with flavors and recipes. I did a lot of trials with food this summer and I’m doing even more now that I have my own kitchen. Avocado is one of absolute favorite foods to play around with. It’s more versatile than you think. I’ve seen recipes for egg salad with avocado, breakfast dishes, even ice cream! I’m eager to try the egg salad recipe. My friend gave me a recipe for a very simple avocado dish that I want to share with you.

My friend’s sister went to Australia and came back with this recipe. Apparently it’s very popular over there. I’m always willing to try new stuff and it sounds pretty simple! I’ll probably take a whack at it this week. For now, here are the instructions:

Mash an avocado.
Cook a diced tomato on the stove with seasonings of choice.
Cook pasta.
Add avocado and tomato to pasta and voilá! Enjoy!
