No surprise here: I did a little baking over the weekend. This time I took on a Southern classic – Coca Cola Cake. We had a good ole fashioned meal on Father’s Day consisting of Baby Back Ribs, Smoked Gouda cheese grits, and squash casserole. Yum yum yum.
The cake was very tasty and very sweet, maybe a little bit too sweet but still good. It was moist and stayed warm 20 minutes after being removed from the oven. For those of you outside the South unfamiliar with Coca Cola Cake, it’s basically a chocolate cake with Coca Cola mixed in the batter. The Cola makes it most and rich giving it a slightly different taste from run-of-the-mill Chocolate Cake.
I hope everyone enjoyed Father’s Day weekend! Mine was pretty low-key, just the way I like it. Pretty exciting week ahead though. My mom’s birthday is tomorrow and the Kenny Chesney, Tim McGraw, Jake Owen, Grace Potter and the Nocturnals concert is Saturday. Yay for busy/fun weeks! Monday isn’t feeling to bad…
I used an icing recipe different from the one paired with the cake recipe in this book.
